Oatmeal muffins

Oatmeal muffins are a hearty and nutritious choice, perfect for breakfast or a snack. They combine the wholesome goodness of oats with the sweetness of muffins. Here’s a basic recipe to get you started:

Oatmeal Muffins

Ingredients:

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk (whole milk or 2% works best)
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins, chopped nuts, or chocolate chips (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups well.

  2. Prepare the Oats: In a small bowl, combine the rolled oats with 1/2 cup of the milk. Let them soak for about 10 minutes while you prepare the other ingredients. This helps to soften the oats.

  3. Mix the Dry Ingredients: In a large mixing bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon (if using).

  4. Mix the Wet Ingredients: In another bowl, whisk together the melted butter, eggs, remaining 1/2 cup of milk, and vanilla extract until smooth.

  5. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients. Gently fold in the soaked oats, mixing until just combined. If you’re using raisins, nuts, or chocolate chips, fold them in at this stage.

  6. Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.

  7. Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  8. Cool and Serve: Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.

Tips:

  • For added texture and flavor, consider topping the muffins with a sprinkle of oats or a mixture of oats, brown sugar, and a bit of butter before baking.
  • These muffins can be stored in an airtight container at room temperature for 2-3 days or frozen for up to a month.

Enjoy your oatmeal muffins as a filling breakfast or a wholesome snack!
